I have 3 words for you…… Mocha Overnight Oats!!
Ah coffee, how I love thee! With the school routine and early morning returning, coffee is the perfect drink and in fact boost, every morning!
There’s something very comforting about a decent cup of coffee. I’m not talking about instant rubbish, and yes I know I sound like a coffee snob (sorry, not sorry!) but ‘proper’ coffee is the ONLY coffee to be talking about.
Beautifully roasted by people who know what they’re doing, subtle underlying flavours and rich aroma.
It’s almost like you’re stood smelling freshly roasted coffee right now, isn’t it!
I’m very lucky, one of my closest friends owns the fabulous and very popular Perkulatte, an artisan coffee company, specialising in mail order delivery of the best coffee around. Check out her website for how to order coffee straight to your door each month.
(Top tip – subscription coffee makes for fabulous birthday and Christmas presents for coffee lovers!!)
We’ve collaborated on a few recipes, including tiramisu, mocha gateaux, panna cotta, mocha freakshake (which is one of the most popular recipes on this site) and more.
And as a way of helping parents with the ‘back to school’ routine, we’re back with another fab collaboration!
As if that’s not enough, there’s also a fab giveaway for you all too!
But first, the recipe……
Breakfast can be chaotic when trying to get children ready for school. There’s so much to get sorted:
- Packed lunches
- PE bags
- Full uniform being worn
- Last minute homework check
- Making sure you have everything for work
Our own breakfast can often end up being forgotten, and only remembered when your tummy is growling at you at 10am.
Well, we have the perfect solution for you!
Simple Mocha Overnight Oats!
They are ridiculously good, don’t take any time to cook, and taste amazing. There’s a subtle coffee flavour, with the warmth of chocolate, combined with the sweetness from the vanilla and sugar. It’s the perfect flavour combination!
The best bit is it takes just minutes to make, then leave in the fridge overnight for the flavours to infuse, then simply take out of the fridge and put in your bag, ready to eat at work. Or if you have time, eat before the school run.
They work perfectly chilled and straight from the fridge, or you can heat in the microwave if you prefer a warming version!
Sounds good doesn’t it, and this recipe will make 3 jars too!
You will need:
- 1.5 cups gluten-free oats
- 2.5 cups dairy-free milk
- 1 cup of made up Perkulatte coffee (left to cool)
- 2 tbsp cocoa powder (make sure dairy-free)
- 1 tsp vanilla extract
- 1-2 tbsp honey/agave nectar/maple syrup
Method:
Add all of the ingredients to a large bowl, mix well and then pour into 3 jars before covering with lids.
Then place in the fridge overnight.
Remove from the fridge and eat cold, or warm in the microwave.
Enjoy!
