There’s pudding, and then there’s ‘pudding’ and we’ve come up with an absolute stunner that’s totally free-from!
Our lovely friend Katie over at PerkuLatte came up with a challenge for us – to create the ultimate pudding that incorporated her coffee, and was free-from.
It’s a big ask, but one that we were more than happy to take on!
After a few attempts, tweaks and alterations, we’ve come up with a bit of a blinder.
So, I give you Latté Panna Cotta, which is dairy, egg, wheat, gluten, and nut free. Oh yes, we really did!
It’s a pot of heaven, creamy, silky, and with a delicate coffee taste. Who says that being free-from can’t be fun!
Recipe – Latté Panna Cotta
Serves – 8
Cooking time – 2hrs (including setting time)
You will need:

350ml dairy-free milk (although any milk would work)
- 150ml strong brewed coffee
- 3 level tsp gelatine
- 2-3 drops of good quality vanilla extract
- 1 tbsp Tia Maria (optional)
- 2 tbsp golden caster sugar
Method:
Add 3 tablespoons of cold water to a small bowl, then sprinkle the gelatine over the top and leave for 5 minutes.
Meanwhile, add the dairy-free milk, coffee, vanilla extract, Tia Maria if using, and golden caster sugar to a saucepan. Warm over a medium heat until just before boiling point.
Remove the saucepan from the heat, stir in the gelatine and leave to stand for around 8-10 minutes.
Prepare 8 ramekin dishes by lightly oiling and placing on a baking tray.
Sieve the panna cotta mix into a jug and pour into the prepared ramekins.
Cover and place in the fridge to set for 1.5hrs before serving.

To be honest I use coffee in soooo many things its hard to choose a favourite - chocolate cake, coffee cake, breakfast smoothies & chilli !! Well ok I lie coffee cake is the best obviously!
This is definitely on my to make list.
