A celebration wouldn’t be complete without a delicious pudding, and this one’s perfect! It’s my go to recipe when I need a pudding fast!
You will need:
- 100g butter - melted
- 250g gluten-free biscuits – crushed
- 600g mascarpone
- 100g sifted icing sugar
- 100g cocoa powder
- 2-4 tbsp Baileys
- 300ml double cream - whipped
Grease and line an 8” cake tin.
In a bowl, add the melted butter and crushed biscuits and stir until well combined. Then turn out into the prepared cake tin and press into the bottom of the tin, making sure it is level.
In a clean bowl, beat the mascarpone, sifted icing sugar, cocoa powder and Baileys until well combined. Carefully fold in the whipped cream, and continue to gently stir until fully combined.
Place the mixture over the base, and ensure you have a smooth and level finish.
Cover and place in the fridge to set until ready to serve.
This cheesecake is truly gorgeous, and a tastebud sensation!
