There is something quite special about a creamy light chocolate mousse, especially when it takes minutes to prepare!
It’s even more special when you’re able to adapt it to become totally ‘free-from’ and healthy too. Yes, really! And it tastes truly amazing!
This recipe has proven to be a massive hit time and again, and is the base for our ever popular ice cream recipe.
You will need:
- 1 large ripe avocado – de-stoned and peeled
- 4 tbsp cacao powder
- 3 tbsp agave nectar
- 1 tsp vanilla extract
- 1 tin of coconut milk – left to settle and water part discarded
- 1 tsp cornflour/ ground arrowroot
Simply add all the ingredients to a blender/ food processor, and blitz until smooth – it will take up to 5 minutes to ensure there are no lumps.
Pour into serving bowls/ dishes and place in the fridge to set for 1 hour before serving (if you can wait that long!)
