When you’re short of time, and want to give your family a nutritious meal, it’s good to have quick recipes up your sleeve. This one is super speedy, and best of all, it’s packed full of goodness!
Keep a few portions of ‘nomato’ sauce in the freezer so that all you have to do is defrost them when you need them.
You will need:
- 3.5 oz (100g) gluten-free pasta
- 1 large red onion – peeled and chopped
- 1 tbsp olive oil
- 1 pack of bacon lardons
- 1 garlic clove – peeled and crushed
- Handful of mushrooms – sliced
- 2 cups ‘nomato’ sauce (See here for recipe)
- ½ cup red wine (optional)
- Handful of curly kale – washed and roughly chopped
- Handful of parsley – chopped
- 1 pack gluten-free sausages – cooked and chopped into bitesize portions
- Pinch of pepper for seasoning
Method:
Cook the pasta according to the instructions on the packet – usually around 10-12 minutes, and when cooked, drain off the cooking water.
While the pasta is cooking, add the onion and olive oil to a large saucepan, and gently fry for around 3-4 minutes until softened.
Add the bacon lardons and continue to gently fry for a further 2-3 minutes, until they start to turn a golden colour.
Then add the crushed garlic clove to the saucepan stir everything together.
Pour in the ‘nomato’ sauce, and the red wine if using. Then add the mushrooms, and leave to simmer for around 8-10 minutes.
Add the kale, parsley, and cooked sausages, as well as the pinch of pepper, and mix until well combined. Then leave for a further 2-3 minutes to allow the kale to soften.
Remove from the heat, and stir into the pasta before serving.
Enjoy!

This place is so fab you have to book months in advance
Though, when it comes to dietary restrictions, a small called The Church where I lived in Japan was the best. The owner would make food fresh based on whatever dietary requirements you had.
Also Al dente on Easter road is good

Coconut Shrimp, Grilled Shrimp, Crisp Golden
Shrimp and Tempura Shrimp with Fries and different dipping sauces, and it was heaven. If you are ever near one of these restaurants, and I know they have one in London, then do give it a go, its a fun place with great food.
I've eaten here a few times now and each time It's been on a Sunday for a roast! The food is very well cooked and they are happy to deviate from the menu, so for me it was a matter of avoiding wheat so no gravy or yorkshires for me :-( , although there were no wheat free options of these available at the time. The roasts here are great, well cooked and plentiful! Lots of options for side orders, not that you need them with the amount of food given on your main course. I'm sure had I taken my own gluten free gravy they would have been happy to make that up for me as I did mention it to our waiting staff on the way out and seemed to think it wouldn't have been a problem. I did have a quick look at the other mains on the menu and there were a number of other options which looked to be suitable for food allergy sufferers, such as fish options, vege options etc. I would definitely recommend this place.
When my grandchildren come to stay we always end up in McDonalds because apart from the fact they both love it there my granddaughter has a peanut allergy and everything is nut free. She can have anything on the menu including ice cream and it just gives me total peace of mind. I dont have to ask the chef or look at the ingredients in all the dishes to find out if it is nut free because everything is !
