Struggling with simple breakfast options? Need a tasty free-from pudding? This quick, nutritious and delicious recipe could be just what you’re looking for!
When it comes to free-from recipes, there's lots of wonderful options out there. But how about totally free-from waffles? This recipe is up there with the greats. It’s so simple to make, the kids can help out. In literally 10 minutes, you have an amazing, nutritious and tasty recipe that everyone can enjoy!
You will need:

4oz (100g) gluten-free self-raising flour

1 ripe banana – peeled and mashed
-
1 tbsp agave nectar/ honey/ choc shot

1 tbsp melted coconut oil + extra to grease the waffle maker
-
4 fl oz (125ml) dairy-free milk
-
Pinch of salt (optional)
-
2 tsp baking powder
-
½ tsp mixed spice/ cinnamon
-
Handful of frozen/fresh fruit
Method:
In a large bowl, add the flour, baking powder, mixed spic and salt and mix until well combined.
In a separate bowl, add the mashed banana, 1 tbsp melted coconut oil, agave nectar and dairy-free milk and gently beat together.
Pour the wet ingredients into the bowl with the dry ingredients and stir gently until just combined. (NB: Be careful not to overmix as the waffles will become dense and heavy)
Pre-heat your waffle maker and grease with the last of the melted coconut oil using a pastry brush. To make sure the waffles don’t stick, make sure you do this each time before pouring in the batter.
Cook according to your waffle maker instructions.
Serve with fresh/frozen fruit and a drizzle of agave nectar/ honey or choc shot.

Would love to win the voucher for Bella Italia
The staff had no idea about what foods were suitable for vegans or were dairy-free an handed me a big thick dirty folder of allergens in all their food. The folder basically showed I couldn't have anything (even all the veg showed "milk" as they had butter on). To be fair to them they did cook me some carrots and greens without butter but unless you want a plate of bland vegetables I wouldn't recommend this restaurant to those who are dairy-free.
