It’s Shrove Tuesday next week, or as it’s also known, Pancake Day! And we have the perfect recipe for you!

American pancake stack 2 Large

 

This absolute delight is dairy, egg, wheat and gluten free, not that you could ever tell!

Here’s how to make them!

You will need:

  • 4.5oz (125g) gluten-free self-raising flour
  • X1 egg replacer
  • 2 tbsp melted coconut oil
  • 3 tbsp agave nectar/ honey/ golden syrup + extra to drizzle
  • 10fl oz (275ml) dairy-free milk
  • 2 tsp baking powder
  • 1 vanilla pod – split and seeds reserved
  • Vegetable oil
  • Handful fresh fruit

Method:

In a large bowl, add the flour, egg replacer, coconut oil, agave nectar, dairy-free milk, baking powder and vanilla seeds and beat until fully combined and lump free.

Cover and leave to settle for a few minutes before cooking.

Place a frying pan over a medium heat and grease lightly with a little of the oil.

Pour a ladle’s worth of batter into the frying pan and cook until you see little bubbles on the surface. Flip/ turn over the pancake and repeat to cook the other side.

Place the pancake on a plate and continue the process until all the batter has been used.

Stack the pancakes, add the fruit and then drizzle with the agave nectar/ honey/ golden syrup to finish off.
