What do you usually reach for at breakfast? Porridge? Toast? Cornflakes? But what about when you are following a gluten-free diet? Do you feel restricted by what’s on offer? Or perhaps you want to make your breakfast a little more exciting!
Well, I’ve teamed up with FREEE by Doves Farm to introduce you to their new cereal range created especially for those following a gluten-free diet and also bring you a new Mixed Berry Gluten-Free Cobbler recipe too!
For 4 Person(s)
Preheat the oven to 180c/ 350F/ Gas 4 and place 3 ramekins/ 1 square roasting tray on a baking sheet.
Put the mixed berries, the vanilla extract and 1 tbsp water into a bowl and stir well before dividing amongst the ramekins or turning out into the roasting tray.
Then leave whilst you make the topping.
In a large bowl add the softened butter and golden caster sugar and beat until well combined.
Then carefully add the FREEE by Doves Farm Gluten Free Plain White Flour, baking powder, FREEE by Doves Farm Gluten Free Corn Flakes and Chocolate Stars and mix carefully until it looks like crumbs/crumble mix.
Place the mixture on top of the mixed berries, being careful not to press down – you want an uneven finish to get the best results and to allow the fruit mixture to bubble up through the topping. Use a little more of the Chocolate Stars for a final sprinkle over the top.
Place in the oven and leave to bake for 20 minutes if in ramekins, 30 minutes if in a roasting tray.
Once golden on top, and the fruit is bubbling away you will know it is ready.
Remove from the oven and leave to cool slightly before serving.
Eat as is if for breakfast, or with dairy-free custard or cream if for pudding.

Now, I don’t know about you, but I find there is something very comforting about mixed berries, even more so when they are turned into a delicious compote as part of a recipe. It’s also a great way of getting extra nutrients into your diet, which is important when you have to exclude certain food groups!
My idea behind this recipe was to not only make it suitable for breakfast, but for it to be a pudding option too, so that I can really show the versatility of this wonderful cereal range to you.
So, imagine a cold morning, looking for something to warm you up to start the day. Or a comforting pudding on a cold day, giving you that cosy feeling.
