We shared our fabulous free-from mincemeat recipe a couple of weeks ago, and today we bring you our ever popular free-from mince pie recipe!
It's a firm favourite in our house, and this recipe is made many times over during the festive period! The added bonus, it just so happens to be dairy-free, egg-free, wheat-free, gluten-free, citrus-free and nut-free too, and still packed full of flavour!
You will need:
- 1 pack short crust gluten-free pastry
- 1 tablespoon of gluten-free flour
- 400g of homemade mincemeat
- Icing sugar to dust
- Large round cookie cutter
- Small star cookie cutter
- 12 hole baking tray
- 2 tbsp dairy-free milk for glazing
Method:
Pre-heat the oven to 180°c/ 350°f/ Gas 4, and lightly grease a 12 hole baking tray.
Lightly flour a smooth work surface, and roll out the pastry, to roughly the width of a £1 coin. Then, using the round cookie cutter, cut out 12 circles of pastry. You can then collect the scraps up and re-roll them to cut out 12 small stars.
Carefully put the circles into the lightly greased baking tray, and make sure they are gently pushed down into place, and making sure there are no air bubbles.
Then add a tablespoon of the mincemeat to each circle, before topping with a pastry star.
Brush the pastry with a little of the dairy-free milk, and then bake in the oven for around 20 minutes, or until the pastry has turned a light golden colour.
Remove from the oven, and leave to cool for 10-15 minutes before gently removing from the baking tray.
Leave to cool fully on a wire rack, and then dust with icing sugar before serving.
