We’ve been testing out the Bute Island Sheeses all week, and are bringing you new recipes each day as we find out more about them!

So far we’ve given you Creamy Tuna Pasta Bake, and also Delicious Pumpkin Pie, and they’ve been going down a storm!

As it’s Halloween this weekend, and we have a LOT of pumpkin to use up, we’re continuing with this theme, to bring you Pumpkin & Chorizo Risotto.

We love risotto in our house, simply because it’s the most unassuming of all ingredients, yet with a bit of love and great ingredients, you can transform it into a dish fit for a king.

We’ve used the chorizo style meat-free sausage that’s part of the Bute Island range, and we’ve also used the creamy garlic and herb cream cheese too. On their own they taste delicious, but marry them up in this recipe and you have a real treat for your taste buds!

This lovely creamy recipe doesn’t disappoint, and the best bit, it just so happens to be dairy-free, egg-free, nut-free but still packed full of flavour!
