Ingredients

For 12 Serving(s)

Chocolate Crispie Cakes

  • 160 grams So Free Dark Chocolate
  • 1 tsp vanilla extract
  • 180 grams mini marshmallows (retaining a handful for decoration)
  • 5 cups crispies
  • 1 handful raisins, dried cranberries etc (optional)

Chocolate Rice Crispie Treats Directions

Put the chocolate in a microwavable bowl, and microwave in 30 second stints until fully melted stirring gently after each 30 seconds. Then add the vanilla extract and stir into the chocolate.

Put the mini marshmallows in a separate microwavable bowl, and microwave in 30 second stints until melted. Usually a maximum of 3 stints is sufficient.

In a large mixing bowl, add the crispies, melted chocolate and melted mini marshmallows and gently stir until combined. (NB: Top tip - lightly oil your spoon so the mixture doesn't stick while you're stirring)

If using, add the raisins or dried cranberries and stir into the mix.

Divide the crispies mixture into the cupcake cases, top with the remaining mini marshmallows and leave to set.

Enjoy!

A couple of months ago, Callum and I were filmed by the BBC to take part in a show called Defenders UK.

The programme was featuring allergies, and the importance of understanding cross contamination and the dangers faced by allergy sufferers when eating out.

You can see the programme by clicking here!

Callum calmly and eloquently explained what happens to him if he has a reaction, the medication he needs to keep him safe, and why it’s so important to declare ingredients used.

As is always the case when we work with the media, we like to show allergies from a positive perspective, and so as part of the programme we made one of Callum’s favourite recipes to show that you still eat yummy food, that looks and tastes as good as ‘normal’ food.

The recipe we made was chocolate crispie cakes, and true to form, Callum had a lot of fun making them!

We’ve now teamed up with the lovely ‘So Free’ Chocolate by Plamil to bring you the recipe ‘as seen on the BBC’.

The 'So Free' Chocolate has no added sugar, and also no milk or nuts. It is also gluten-free! So perfect for anyone with free from requirements.

The best bit, this free from chocolate tastes and behaves like 'normal' chocolate does. You'd be hard pushed to tell the difference. It melts beautifully - it's so silky and smooth and can be eaten as it comes, or used in recipes such as this one!
