Have a bumper crop of rhubarb to use up? This delicious free-from rhubarb and ginger crumble is just for you!

Deliciously free from Rhubarb & Ginger Crumble 

At this time of year, rhubarb is in abundance, and if it’s anything like our plant, it seems to have gone a bit wild. We’re struggling to keep up with using it in time. We’ve been making rhubarb cake, crumble bars and delicious rhubarb coulis. They all taste wonderful, but the favourite in our house is still the humble crumble.

With delicate hints of warmth from ginger, and the added bonus of a big boost of nutrients, rhubarb is always going to be a winner.

You will need:

  • 6-8 stalks of rhubarb – washed and cut into cubes
  • 1 tsp ground ginger
  • 2 tbsp demerera sugar/ agave nectar/ fruit syrup/ honey
  • 100g dairy-free spread
  • 100g golden caster sugar
  • 200g gluten free self-raising flour


Preheat the oven to 180°c/350°f/ Gas 4, and lightly grease 8 ramekins.

In a large bowl, add the rhubarb, ginger and sugar/agave nectar/ fruit syrup or honey and stir gently until combined.

Spoon the rhubarb mix into the ramekin dishes until ¾ full.

In a separate bowl, add the dairy-free spread and caster sugar, and gently combine.

Then add the gluten free self-raising flour and gently mix until it resembles bread crumbs.

Spoon the crumble mix over the rhubarb and gently press down.

Place the ramekins on a baking sheet, and place in the oven to bake for around 15-20 minutes until the crumble topping turns a golden colour and the rhubarb is gently bubbling underneath the surface.

Leave to cool slightly before serving/ using.
