When you’re short of time, and want to give your family a nutritious meal, it’s good to have quick recipes up your sleeve. This one is super speedy, and best of all, it’s packed full of goodness!

Nomato Sausage Pasta Large

Keep a few portions of ‘nomato’ sauce in the freezer so that all you have to do is defrost them when you need them.

You will need:

  • 3.5 oz (100g) gluten-free pasta
  • 1 large red onion – peeled and chopped
  • 1 tbsp olive oil
  • 1 pack of bacon lardons
  • 1 garlic clove – peeled and crushed
  • Handful of mushrooms – sliced
  • 2 cups ‘nomato’ sauce (See here for recipe)
  • ½ cup red wine (optional)
  • Handful of curly kale – washed and roughly chopped
  • Handful of parsley – chopped
  • 1 pack gluten-free sausages – cooked and chopped into bitesize portions
  • Pinch of pepper for seasoning

Method:

Cook the pasta according to the instructions on the packet – usually around 10-12 minutes, and when cooked, drain off the cooking water.

While the pasta is cooking, add the onion and olive oil to a large saucepan, and gently fry for around 3-4 minutes until softened.

Add the bacon lardons and continue to gently fry for a further 2-3 minutes, until they start to turn a golden colour.

Then add the crushed garlic clove to the saucepan stir everything together.

Pour in the ‘nomato’ sauce, and the red wine if using. Then add the mushrooms, and leave to simmer for around 8-10 minutes.

Add the kale, parsley, and cooked sausages, as well as the pinch of pepper, and mix until well combined. Then leave for a further 2-3 minutes to allow the kale to soften.

Remove from the heat, and stir into the pasta before serving.
