The ultimate comfort food is a crumble, and whilst fruity crumbles are what we all love, sometimes it’s good to shake things up a bit! We have a new recipe to share, and a fab competition for you to enter!

Our lovely friends at Bute Island Foods sent us a wonderful package for Christmas, packed full of Callum’s favourite sheeses and vegan salami. Hidden amongst them was a true delight! They have just launched their new ‘Greek Style Feta Sheese’, which we couldn’t wait to try!

Now, I love ‘normal’ feta cheese, so I was intrigued to find out how this would compare.

Oh my goodness!!

You couldn’t tell that this one was totally dairy-free. It has the same creamy flavour and slightly crumbly texture of a ‘normal’ cheese. It’s so good, even Jon couldn’t tell the difference. If you were to put this on a cheese board, no one would be able to tell that it was dairy-free. Yes, it really is that good!

I immediately decided to come up with a new recipe to see how it fares when cooked. I could have made something obvious like a warm salad with feta crumbled through it, or a spinach and feta cannelloni style dish. But then I decided to go for comfort, especially as we are currently experiencing some very cold weather.

Vegetable Feta Crumble 1

So, here is a delicious Vegetable & Feta crumble. It’s a beautifully vibrant and tasty dish, packed full of delicious vegetables and so tasty too! It takes just 3 simple steps:

You will need

For the vegetables:

  • 1 red onion – peeled and chopped
  • 1 garlic – peeled and crushed
  • Mushrooms – cleaned and diced
  • Cherry tomatoes
  • 2 courgettes - diced
  • 1 pepper, diced
  • 1 butternut squash – peeled and diced
  • 1 large sweet potato – peeled and diced
  • Olive oil
  • Sprig of rosemary - chopped

For the sauce

  • 2 tablespoons self-raising gluten-free flour
  • 1 tablespoon dairy-free spread
  • 7fl oz (200ml) dairy-free milk
  • Pinch of nutmeg

 For the crumble:

  • 150g plain gluten-free flour
  • 50g dairy-free spread
  • 40g gluten-free oats
  • 2 tablespoons dairy-free milk
  • 65g dairy-free feta sheese - crumbled

Preheat the oven to 180°c/ 350°f/ Gas mark 4, and lightly grease a large roasting tin whilst preparing all vegetables.

Add the red onion, garlic, mushrooms, cherry tomatoes, courgettes, pepper, butternut squash and sweet potato to the prepared roasting tin. Drizzle a little olive oil over the vegetables before sprinkling the rosemary to the top. Place in the oven to roast for around 25 minutes, or until the vegetables start to turn slightly golden in colour.

Whilst the vegetables are roasting, you can make the creamy sauce.

Place a saucepan over a medium heat and add the dairy-free spread. Once melted, add the flour and stir until well combined. Remove from the heat and slowly add the dairy-free milk a little at a time, remembering to stir continuously.

Return the saucepan to the heat, and continue to stir until the sauce thickens. Add a pinch of nutmeg, stir once more and then remove from the heat.

To make the crumble topping, add the gluten-free flour and dairy-free spread to a large bowl, and stir until the mixture looks like breadcrumbs. Add the oats and dairy-free milk and stir well, until the mixture looks like breadcrumbs again. Stir in the dairy-free feta sheese, and then put to one side.

Carefully remove the vegetables from the oven, pour the creamy sauce over the top, and spread over the vegetables. You don’t need to stir as the sauce will distribute evenly during the cooking process. Sprinkle the crumble topping over the top, and place the roasting tin back in the oven for a further 20 minutes, or until the crumble topping has turned a beautiful golden colour.

Remove from the oven, and leave to cool slightly before serving.
